Ingredients

  • 1 carton of whole eggs
  • 2 oz crumbled feta cheese
  • ½ cup finely chopped red onion
  • ½ cup finely chopped cucumber
  • 1 tsp ground black pepper
  • 2 tbsp water

How to Make it

  1. Pre-heat oven to 400° F
  2. Put 12 eggs in a large mixing bowl
  3. Whisk eggs until well blended
  4. Add cucumber, red onion, feta cheese, and black pepper and mix well
  5. Add 2 Tbsp water to thin out
  6. In a 12-count muffin tin, spray with non-stick spray
  7. Divide the mixture evenly among the 12 muffin tins
  8. Bake for 10 minutes, turn the pan around and bake for another 10 minutes, or until fully cooked inside (165° F internal temperature).

Ingredients

  • 7 cups Rice Krispies cereal
  • 3 cups Rice Chex Cereal
  • 11 cups mini marshmallows
  • ½ cup unsalted butter
  • 3 tsp holiday sprinkles
  • 1 tsp vanilla extract

Directions

  1. In a pot melt 8 cups mini marshmallows, unsalted butter, vanilla extract.
  2. Once evenly mixed add in Rice Krispies and Rice Chex Cereal.
  3. Remove from heat and add holiday sprinkles and the last of the marshmallows.
  4. Place mixture into a pan lined with parchment paper.
  5. Cut into 20 servings and enjoy!

Ingredients

  • 3 lb. pork tenderloin
  • 1 medium apples
  • ½ onion
  • 3 tbsp minced garlic
  • 1 tbsp rosemary
  • 1 tsp black pepper

Directions

  1. Preheat oven at 350
  2. In a pan add chopped onions, chopped apples, garlic, and rosemary. Cook until onions are translucent.
  3. Butterfly and season pork with black pepper.
  4. Add filling and roll tightly.
  5. Stick toothpicks though rolled pork tenderloin to help keep in place.
  6. Place rolled pork tenderloin in the oven and cook for an hour (or until pork reaches an internal temperature of 155.
  7. Cut into 12 pieces and enjoy!

Ingredients

  • 4 large apples
  • 1/3 cup granulated sugar
  • 5 tbsp unsalted butter
  • 2 tsp cinnamon
  • 1 tbsp brown sugar
  • 2 1/2 cup all purpose flour
  • 3/4 cup shortening
  • 1/3 cup water

Directions

  1. Preheat oven to 420°F.
  2. Peel apples and remove core.
  3. Place prepped apples in a bowl along with cinnamon, butter, and sugar.
  4. Make crust by mixing together flour, shortening, and water. Use a dough blender to help mix ingredients.
  5. Use half of the dough to cover bottom of pie pan and add in apples.
  6. Roll out other half of dough. Place on top of apples in the design of your liking.
  7. Sprinkle brown sugar on top and bake for 1 hour.
  8. Let cool and cut into 8 pieces

  • 3 cups soft, stale breadcrumbs
  • 1/4 tsp poultry seasoning
  • 1/4 tsp fresh rosemary
  • 1/4 cup apple juice
  • 1/2 cup fresh cranberries,diced in half
  • 2 tbsp melted margarine
  • 1/4 cup chopped celery

Directions

  1. Preheat oven to 350°F.
  2. Combine all ingredients and mix evenly.
  3. Spray casserole dish with oil.
  4. Place mixture into casserole dish and bake for 30 minutes.

Ingredients

  • 2 pieces of white bread
  • 3 ounces of turkey
  • 2 slices of onion
  • 3 pieces of lettuce
  • 1 tbsp light mayo
  • 1 tbsp fat-free sour cream

Directions

  1. Toast 2 pieces of white bread.
  2. Construct a sandwich by adding turkey, onion, and lettuce.
  3. Make “DCC healthier version of mayo” by mixing together light mayo and fat-free sour cream.
  4. Spread on toast.
  5. Slice sandwich in half and enjoy!

Ingredients

  • 1/4 cup canola oil
  • 1/2 cup chopped onion
  • 6 minced cloves of garlic
  • 1/2 cup all-purpose flour
  • 4 tsp nutritional yeast
  • 2 cups low-sodium
  • Vegetable broth
  • 1/2 tsp dried sage
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions

  1. Heat oil over medium heat and sauté onion and garlic until translucent.
  2. Stir in flour and nutritional yeast to form a smooth paste.
  3. Gradually whisk in the broth.
  4. Season with sage, salt, and blackpepper.
  5. Reduce heat and simmer. Stir constantly for 8-10 minutes until thick.

Ingredients

  • 5 cups apple cider
  • 1/2 cup water
  • 3 cinnamon sticks
  • 1 tbsp lemon juice
  • 1/4 tsp allspice

Directions

  1. In a pot add apple cider, water, cinnamon sticks, lemon juice, and allspice.
  2. Simmer on stove for 1 hour (Avoid boiling).
  3. Serve in a mug and enjoy!

Ingredients

  • 4 Potatoes
  • 3 Garlic Cloves Minced
  • 2 tbsp Unsalted Butter
  • 1 tsp Pepper

Directions

  1. Wash and peel the skin off of the potatoes.
  2. Cut the potatoes into 1/8-inch pieces.
  3. Place the potatoes in a pot and fill with water until potatoes are fully covered
  4. Bring the water to a boil and cook for 10 minutes.
  5. Drain the water and fill pot back up with water until potatoes are fully covered.
  6. Boil for the second time for another 5-10 minutes (or until soft and tender).
  7. Drain water and place in serving bowl.
  8. Mix together potatoes, unsalted butter, pepper, and garlic.

Ingredients

  • 4 cups baby carrots
  • 2 tsp maple syrup
  • 1/2 tsp black pepper
  • 1/2 tsp vanilla extract
  • Optional: 1 1/2 tbsp fresh rosemary

Directions

  1. Boil/Steam carrots until carrots are tender.
  2. Lower heat and mash carrots with a potato masher / fork.
  3. Mix in maple syrup, pepper, and vanilla extract.
  4. Optional: garnish with chopped rosemary and serve.
